When folks ask us about icon design, I get the impression what they're really asking us about is how to draw an icon. That's certainly part of it; but in my opinion, what really separates the men (or women) from the boys (or girls) is logography. How do you draw meaning?
TurboMilk put up a great post about this very thing, and it's more or less the process we use ourselves; though personally I do it more out of instinct and experience than as a really formal approach.
The examples at the end are especially informative. That's good stuff.

Very nice read on the subject. I've been tasked with a couple (very small) icon sets in the past, so this will definitely come in handy.
