Pink Lemonade Pie (by request)
Fredclef and I have been talking food a while and recently he asked about a pie I make. So... here's the recipe!
1 large bowl of cool whip, thawed
half a can of frozen pink lemonade
1 can of sweetened condensed milk
1 teaspoon of vanilla extract
3-4 drops of red food coloring (to make it pink!)
2 graham cracker crusts
Mix first five ingredients together in a large bowl, until well blended. Pour into the ready made graham cracker crusts, and chill for about an hour, or until firm enough to cut.
You can decorate the pie with sugar coated lemon slices for an added effect or perhaps shaved dark chocolate curls. I've even melted semi-sweet chocolate chips and poured a layer over the top of the pie.
These freeze really well too, so make them ahead of time if you like. Just pop it in the fridge to thaw the night before using.
